Immune Boost Slow Cooked Chicken Soup

Eating with the seasons is an exciting event! They form nature’s framework for healthy eating and are crucial to balancing the earth’s resources and life forms.

Food processing and worldwide distribution means that food is available all year round, so it’s easy to be disconnected with each season’s bounty.

Hearty root vegetables, bean dishes, soups, stews and roasted nuts increase body heat and warm us to the core. Lighter dishes such as fresh greens, winter salads and other colorful vegetables add balance and variety.

Here is one of my favourite hearty immune boost slow cooked chicken soups, it is a nutritious bone broth. A cozy warming recipe, you can prepare everything in the morning and when you arrive home in the evening, you have a delicious cooked meal waiting for you.

Ingredients:
A medium size chicken with the breast removed (to have as another meal)
2 red onion, chopped
3 garlic cloves, chopped
2 celery stalks, chopped
1/2 large sweet potato, chopped
1/2 bunch rainbow chard, or any greens
2 tablespoons tumeric fresh root or dry powder
2 tablespoons grated fresh ginger
4 – 6 dried star ainse
3 – 4 dried bay leaves
Back pepper to taste
1 tbsp apple cider vinegar, which helps extract the minerals from the bones, boosting the nutritional content.

Method
I like to fry off the vegetables and brown the chicken before I put it into the slow cooker to bring out the flavour’s. Then add 1 litre of water and let it cook in the slow cooker on low for 4 – 6 hours, until the chicken is succulent and falling off the bone.

 

If you want more vegetables, then just add more to your hearts content and you have a cleansing, immune boost bone broth chicken soup!
